The Four Functions of Management
The four factors of management are:
- Planning
- Organizing
- Influencing
- Controlling
To maximize operational efficiency, a manage must effectively plan each day. Poor or no planning can lead to chaos (daily events are not controlled by anything).
Organizing allows for the smooth operation of the restaurant. Employees perform better when they work in an organized environment.
Influence is utilized to lead the staff. Most employees want to be given direction by a leader who commands respect and has a positive influence on people.
Controlling skills are required to keep fixed and variable costs under control. Controlling does not, and should not, refer to a managers relationship with employees.

Quick Tip
Improving Labor Productivity
Improving labor productivity is accomplished either by performing more work with the same number of employees working the same number of hours, or by performing the same amount of work with fewer people or in less time. However, if the quality of your food product and consumer service declines in the process, you have harmed and not helped your operation.
