Your Receiving Practices May Be Contributing to Your Food Cost Problem

There are two primary reasons for checking deliveries. The first is to ensure that you get exactly what you ordered, while the second is to make certain you get what you are paying for. Purchase specifications are established based on the standard recipes you developed for your operation. All of those written specifications are for naught if the person checking the delivery isn't aware of what was ordered. Ask yourself what document the person in charge in charge uses to check the delivery. In almost every case it is the delivery invoice. While it may be an indication of what the supplier put on the truck, it is not 100-percent accurate of what was ordered.
